Chili Sauce

qt Tomatoes, cut in quarters

T Mustard seed

c Onions, sliced

T Celery seed

c Green peppers, sliced

1/2 c Cider vinegar
1
T Salt
1
c Sugar- brown, white, maple,
3
T Mixed pickling spices
Or
Honey, whatever is handy...
Mix everything together in a big pot and put on the back of
woodstove so that everything simmers gently for days. It is ready
when it reaches the thickness you want.
